Sometimes you need a breakfast that doesn't only taste good and is packed with nutrition but also looks beautiful. A bright colorful Dragon Fruit Smoothie Bowl completely meets the job description and is the perfect quick-and-easy breakfast.
I was lucky to find pink dragon fruit at the supermarket and I had to get it for making my own delicious pitaya smoothie bowl. Lots of Pitaya Smoothie Bowl recipes on the internet use the frozen pink dragon fruit, but I don't use any packaged frozen fruits or veggies ever. If I am planning a creamy smoothie bowl in the morning, I freeze fresh fruit overnight.
My recommendation for preparing your smoothies is to only use fresh and seasonal fruits. They are the best kind and deliver the most nutrition and health benefits!
Dragon fruit on its own doesn't have any flavor or taste but it is packed with vitamins (high in Vitamin C), minerals and is high in protein. It also gives a gorgeous pink hue to the smoothie. A delicious flavorful sweet mango creates a creamy sweet base for the smoothie, you can use banana is mango is out of season or unavailable. Peach and blueberries add great taste and a nice flavor and boast of loads of antioxidants, amino acids, and vitamins.
I'm not a big fan of protein powders in my smoothies, because they tend to change the flavor and not in a good way. However, if this is your post-workout fuel you can charge it with a scoop of vegan protein powder.
Combining all these ingredients together gives you a thick, creamy smoothie bowl that tastes like a delicious treat, looks pretty, requires just 10 minutes to make and is entirely customizable The perfect way to start your day.
Did you notice the coconut bowl? I got them from my recent trip to Thailand. I'd been looking for plain coconut bowls, but the only ones I could manage to find were these, they have lacquer on the inside. But aren't they so pretty?

SMOOTHIE
Blend all the ingredients together.
The secret to getting the perfect creamy smoothie bowl consistency is blending it slow and scraping often. You don't need much liquid for the smoothie bowl, so only add very little for smooth blending.
Pour the smoothie in a deep bowl and garnish it with toppings. I have used fresh mango chunks, grated coconut, pistachio and fresh blueberries for the toppings, but you can be creative and make it your own. Hemp seeds, chia seeds, goji berries and even granola can be other good toppings.
Serve cold and consume it immediately.
